- Iberian pork shoulder 600 g
- 50 g butter
- 2 tablespoons of sugar
Step by step instructions for the recipe of secreto with pomegranate reduction
Step 1
Split the pomegranates in halves and pound the peel to release the pomegranate arils or use four tubs of shelled pomegranate (400 g).
Step 2
Whisk the arils and strain or strain through a chinois.
Step 3
Heat over low heat adding the sugar until the juice is reduced to a thick cream. Add the butter.
Step 4
Season the secret with salt and pepper and cook it in a very hot frying pan, first on the fat side.
