Ingredients
- Peeled pumpkin 300 g
- Cooked lentils 100 g
- Quinoa 100 g
- Purple onion
- Ripe pear tomato
- Extra virgin olive oil
- Half a lemon or half a lime

Step 1
Heat a saucepan with water and a pinch of salt.
Step 2
Cut the pumpkin into 2 cm cubes.
Step 3
Prepare a bowl with ice water. Blanch the pumpkin in the boiling water for 2 minutes. Cooling in water. Strain and reserve.
Step 4
Patiently wash the quinoa in cold water to eliminate its bitterness. Boil in hot water as if it were rice for 15 minutes. Strain and reserve.
Step 5
Cut the onion and tomato into small cubes (brunoise).
Step 6
Dress the onion and tomato in a bowl with the juice of half a lime.
Step 7
Add pumpkin and lentils to the bowl. Mix and season to taste.

Serve and garnish with the sprouts and the charcoal salt.
