- Watermelon 500 g
- Tomato Cherrys of colors
- Arugula 20 g
- 4 Anchovies
- ½ Red onion
- Basil Leaves
- Sherry vinegar 1 tablespoon
- Mozzarella cheese balls or cubes
- Salt
- Sliced black olives
- Extra virgin olive oil AOVE
Step-by-step instructions for the low temperature watermelon tenderloin recipe
Step 1
To prepare the low temperature watermelon loin and arugula and cherry salad, we start by seasoning the watermelon discs of 10 cm in diameter and 3 cm thick and browning them in hot oil.
Step 2
Once both sides are browned, we cook them over low heat for half an hour. Reserve.
Step 3
We make a vinaigrette with sherry vinegar, olive oil and salt. Add the cherry tomatoes cut in quarters, red onion, arugula and mozzarella cheese, either in balls or cubes, and the sliced black olives to the dressing. Mix and let stand for 5 minutes.
Step 4
To plate, place the watermelon and top it with the mixture prepared separately, being careful not to leave the disk. Garnish with a couple of anchovies and some basil leaves.
