In our daily cooking, it is common to discard parts of fruits and vegetables that, out of ignorance, we believe are not useful or have no value.
However, many of these parts such as seeds, stems and skins are edible and, in addition, are tasty and full of nutrients.
Making the most of each ingredient reduces food waste and allows you to experiment with new flavors and textures.

So that you too can contribute from home, here are some creative and delicious recipes that you can make with parts of our products that we normally throw away and that you can still get a lot out of.

Pumpkin Seed Sauce Recipe

This sauce is ideal as an accompaniment to meats, roasted vegetables or even as a salad dressing.
Ingredients: – 1 cup of pumpkin seeds, which you can extract so consume a Peris pumpkin.
– 2 cloves garlic – 1 jalapeño (optional, for a spicy touch) – Juice of 1 lime – 1 cup fresh cilantro – ½ cup water – Salt and pepper to taste – Olive oil Step by step:

  1. Extract the pumpkin seeds, wash them and let them dry.
  2. Toast the pumpkin seeds in a skillet over medium heat until they are golden brown and begin to pop.
    Be careful not to burn them because the sauce will be bitter.
  3. In a food processor add the toasted seeds, garlic, jalapeño, lime juice and cilantro.
  4. Add a little water until the desired consistency is reached.
  5. Season to taste with salt and pepper, and add a drizzle of olive oil for a finishing touch.

Recipe of potato omelette with spring onion stalk

Ingredients: – 4 to 5 medium potatoes, peeled and cut into thin slices.
Do not throw away the skins!
You can also use them for another recipe that we will tell you about below.
– 1 bunch of Peris spring onions (we will use the green part, which is usually thrown away) – 6 eggs – Olive oil – Salt and pepper to taste Step by step:

  1. In a large skillet, heat olive oil and cook potatoes over medium heat until tender and lightly browned.
    Remove from heat and drain excess oil.
  2. In a large bowl, beat the eggs and add the green part of the spring onions, salt and pepper.
  3. Incorporate the potatoes into the egg mixture.
  4. In the same pan, add a little more olive oil and pour the egg mixture, green onion stems and potatoes.
  5. Cook over medium-low heat until the bottom is golden brown and firm.
  6. Turn the tortilla over with the help of a plate and cook the other side until it is completely cooked.
  7. Serve hot or at room temperature.

Crispy potato skin chips recipe

Ingredients: – Potato skins (4 to 5 medium-sized potatoes) – 2 tablespoons of olive oil – Salt to taste – Spices to taste (paprika, garlic powder, rosemary…) Step by step:

  1. Preheat the oven to 200°C.
  2. Wash the potatoes well before peeling to remove any dirt or residue.
  3. Place the skins in a bowl and mix them with the olive oil, salt and spices of your choice.
  4. Spread the skins on a baking sheet, making sure they do not overlap.
  5. Bake for 15-20 minutes or until skins are golden brown and crispy.
  6. Let cool and enjoy as a healthy and flavorful snack.
